Duck with Chao sauce

Ingredients :

  • Duck roughly chopped 1kg
  • Fish sauce 2tsp
  • Soysauce 2tsp
  • Sugar 2tbsp
  • Oyster sauce 2tsp
  • Five spices 1/2tsp
  • Black pepper 1pinch
  • Garlic 1tsp
  • Lemongrass 1tbsp
  • Ginger 1tbsp
  • Chilli 1tbsp
  • Chao sauce ( fermented Tofu ) 1tbsp
  • Oil 1tbsp
  • Taro 100gr cut Cube
  • Carrot 100gr cut Cube
  • Coriander 2stems
  • Coconut milk  1 cup
  • Water 1 cup

Method :

  • Blanched taro and carrot in the Hot oil in 2 minutes
  • In the pot saute garlic ,chilli ,ginger ,lemongrass until nice colour
  • Add duck and all the sauce together .add 1 cup coconut Milk and 1 cup of water. Slow cooked for 40 minutes
  • Add taro and carrot into the pot and slow cooked for 10 minutes
  • Garnish with coriander and Black pepper
  • Serve with bread or noodle
