Vietnamese CharSiu ,Pate with jasmine rice serve with fish sauce dipping
Ingredients
- Pate :2tbsp
- Charisu 80gr
- sauce left over from charsiu 1tbsp
- cucumber slice 30gr
- Mints , coriander 10gr
- lettuce 50gr sliced roughly
- Pickle 30gr ( carrot , papaya or white radishes julienne with sugar , lime/kumquats 1:1 and pinch of salt )
Method :
- Place the Fresh rice noodle in one side of the plate then add 2tbsp pate on the size of the plate then add charsiu on the lettice and the sauce from charsiu on the size , cucumber , pickle , mints ,coroander /Serve with fish sauce dipping
Fish sauce dipping

- fish sauce 1tbsp
- sugar 1tbsp
- water 1tbsp
- lime/vinegar/kumaquats 1tbsp
- garlic and chilli a pinch
Method : Mixed all ingredients together
Vietnamese Pate
Ingredients
- Pork liver 250gr
- Pork minced 150gr
- Bread 1pcs
- Milk 250ml
- Fish sauce 2tbsp
- sugar 2tbsp
- oyster sauce 2tbsp
- Soysauce 2tbsp
- five spices 1 pinch
- black pepper 1tsp
- onion minced 1tsp
- garlic 2tsp
- chilli 1tsp
- rice wine 1tbsp
- Method :
- Sliced pork liver in thin slices then soaked with 125ml milk ( no sugar) in 20 minutes .washed it clear with fresh water then marinade with 1tbsp fish sauce , 1tbsp sugar ,1tbsp oyster sauce ,1tbsp soysauce , 1pinch of five spices,1/2tsp of pepper
- Pork minced also marined with 1tbsp fish sauce , 1tbsp sugar ,1tbsp oyster sauce ,1tbsp soysauce , 1pinch of five spices,1/2tsp of pepper
- Bread tear it into small pieces then add the rest of milk and stir it well
- Add 1tbsp of oil . Saute all the garlic , onion , chilli until nice smell add all the pork liver and pork minced .Stir it well until it cooked add bread into it and stir it well for 1 minute
- let it cool down and blended it then add on some pork fat on the bottom of the tray then steam it or BBQ it for 20 minutes . Serve hot
Vietnamese Charsiu
Ingredients
- Pork neck cut big pcs about half size of your hands 250gr
- Fish sauce 1tbsp
- sugar 1tbsp
- oyster sauce 1tbsp
- soysauce 1tbsp
- Garlic 2tsp
- onion 1tbps
- Chilli 1tsp
- turmeric 1/2tsp
- Curry powder 1/2tsp
- Annato seed powder 1/4 tsp
Method :
- Mixed well togeteher and rest for 20 minutes to 1 hour
- add 2tbsp oil into the meat and place it into the pan or oven . cooked for 20 minutes in the low heat or 180 degrees in 35 minutes
