Crispy Crab with Xo sauce

Crab :

  • Crab cut small pieces 500gr
  • Eggwhite 1 pcs
  • Tapioca flour 2tbsp

Method : Mixed all ingredients and Deepfryer for 5 minutes in 180 degrees

How to make the crispy crab with Xo sauce

Xo sauce 3tbsp

  • Water 1cup
  • Oyster sauce 1tbsp
  • Ginger julienne 1tbsp
  • Onion julienne1tbsp
  • Chilli julienne 1tbsp
  • Coriander for garnish
  • Eggyoke 1pcs
  • Tapioca 1/2tsp
  • Five Spices 2 pinches

Method :

  • saute ginger ,chilli and Onion then addd xo sauce ,water and tapioca flour ,oyster sauce .Stir it well for 1 minutes
  • Add the crispy crab into the wok and toss gently for 10 seconds
  • . garnish with coriander and Serve hot

Ingredients

  • Lemongrass Minced 1cup
  • Onion minced 1 cup
  • Ginger minced 1/2cup
  • Garlic Minced ½ cup
  • Chilli Minced ½ cup
  • Fish sauce 4tbsp
  • Soysauce 4tbsp
  • Oyster sauce 4tbsp
  • Chilli sauce 4tbsp
  • Five Spicy Powder 1tbsp
  • Dry Prawn soaked water for 1 hour 1 cup
  • Dry Squid soaked water for 1 hour ½ cup
  • Dry salt fish Soaked Water for 1 hour 1cup
  • Oil 1 Litre

Method:

  • Blanched dry Prawn ,Squid and Fish in The Hot Oil for 3 mimutes
  • Drain the prawn ,fish and Squid on the Sides
  • Add 1 litre of oil into the wok then saute onion until nice golden colour
  • Add lemongrass ,ginger a,garlic and  chilli and stir for 2 minutes
  • Add all dry fish ,squid and Prawn into the wok .Stir it well
  • Seasoning with fish sauce ,sugar ,oyster sauce ,chilli sauce and Five spices powder
  • Serve Hot
