Crispy Prawn / Duck with Tamarind Sauce
Ingredients :
- 1duck Leg without Bone /8pcs Prawn peeled
- 1tsp seasoning (salt ,peper,sugar 1:1:1/2)
- Eggwhite 1 pcs
- Julienne carrot 50gr
- Julienne papay 50gr
- Onion julienne 50gr
- Basil roughly chopped
- Julienne chilli 20gr
- Tapioca Flour enough to coating the Duck /prawn
- Cashew Nut 20gr
- Seasame 1tsp
Method :
- Marinade sliced duck Leg/ prawn with 1pinch salt,1pinch sugar and 1 pinch Black pepper .Rest for ½ hour
- Coating duck leg /prawn with Corn flour or Tapioca Flour
- Deep fryer 180 degree into 3 minutes for duck and 1minutes for Prawn
- Turn Maximum Heat in 1 Minutes
- saute garlic , chilli , ginger , lemongrass then add all carrot , papaya ,onion chilli and tamarind sauce
- Add Duck/Prawn . quick stir
- Garnish with cashew Nut and Seasame seeds
- Serve Hot
Tamarind Sauce
Ingredients :
- Tamarind Juice 1tbsp
- Sugar 1tbsp
- Fish sauce 1tbsp
- Oyster sauce 1tbsp
- Chilli sauce 1tsp
- Water Or Duck stock/prawn Stock 120ml 5tbsp
- Tapioca or Potato starch to thicken the sauce
- 1tsp Minced Garlic
- 1tsp Minced shallot
- 1tbsp Oil
Method :
- Saute Garlic and shallot then add 100ml of Water or duck stock into the Wok
- Add 1tbsp sugar ,1tbsp fish sauce ,1tbsp oyster sauce ,chilli sauce ,Tamarind Juice ,soysauce ,water
- Checking flavour By Your Convenience .Thicken with potato starch
