  1. Special Tapioca,Tofu and Vegetables with Rice Noodle Soup

Ingredients

  • Tapioca 100gr cut Cube pcs
  • Carrot flower 30gr
  • Tofu Cut Cube 50gr
  • Spinach 50gr
  • Mushroom 50gr
  • Lemongrass 1tbsp
  • Garlic 1tsp
  • Ginger 1tsp
  • Chilli 1tsp
  • Water 1 Litre
  • Salt 1/2tbsp
  • Sugar 1/2tbsp
  • Oyster Mushroom powder 2tbsp
  • Annatto seed oil 2tbsp
  • Cinnamon 1stick
  • Cardamom 1 stick
  • Black pepper 1 pinch
  • Beansprout 20gr
  • Rice Noodle 150gr
  • Kumquats ,coriander, spring onion , basil , hoisin sauce ,chilli sauce , soy sauce to garnishing

Method :

  • Sauté garlic , chilli , ginger , lemongrass , cinnamon stick , cardamom with annatto seed oil until nice smell
  • Then cook for 20minutes add tapioca cut cube pcs,fried tofu  and cook for 10 minutes
  • Seasoning with salt, sugar and oyster mushroom powder
  • In the bowl Blanched beansprout and rice noodle then place it on the bowl then blanched spinach, carrot , mushroom place on the top of noodle
  • Add tofu, tapioca and soup cover whole noodle and vegetables
  • Garnish with coriander, spring onion , basil
  • Serve with hoisin sauce, soysauce and kumquats , chilli sauce
