Glass Noodle salad with Spicy Squid
Ingredients -
Sweet and sour Kumquat dressing
- 1tablespoons of kumquat juice (“nước tắc”)
- 1 tablespoons of sugar
- 1 tbsp Nuoc Mam (fish sauce)
- 1teaspoons of minced garlic (“tỏi”)
- 1 teaspoons of minced red long chili (medium spicy)
Salad
- 100GR Glass Noodle Boiling and refresh with cold water
- 20 g onion cut in Julienne (“hành tây”)
- 20 g carrot cut in fancy Julienne
- 20gr Cucumber Julience
- 20gr capsicum julienne
- 100gr Spice squid
- Vietnamese basil cut in Jullienne (“húng quế”) 4 leaves
- 20 g of roasted peanuts
- 20gr roasted sesame
Method
Dressing
- In a bowl add Kumquat juice, sugar and fish sauce. Whisk until the sugar is completely dissolved
- Then add about 1 teaspoon of garlic and1teaspoons of chopped chili.
Salad
- Add all salad into the Bowl
- Add the salad dressing and toss gently.
- Arrange the salad on a serving plate. Sprinkle with the crushed peanuts, fried shallots and garlic and serve immediately.
Spices Squid
- Julienne Squid 100gr
- Julienne lemongrass 10gr
- Julienne ginger 10gr
- Garlic 1tsp
- Julienne chilli 10gr
- Salt 1 pinch
- Sugar 1 pinch
- Chilli sauce 1tsp
- Five spices 1 pinch
- Black pepper 1 pinch
Method:
Add all ingredients together and mixed well then put all into hotpan for 1 minute and serve on the top of salad
