BBQ Eggplant with special HCM Cooking Sauce

Ingredients

Dressing sauce :

  • Sweet and sour Kumquat dressing
  • 4 tablespoons of kumquat juice (“nước tắc”)
  • 4 tablespoons of sugar
  • 4 tbsp Nuoc Mam (fish sauce)
  • 2 teaspoons of minced garlic (“tỏi”)
  • 4 teaspoons of minced red long chili (medium spicy)
  • 4tbsp mineral water

Method : Mixed well togther until sugar disolved

Salad :

Ingredients :

  • Garlic 1tsp
  • Spring onion and garlic chive 1tsp
  • Pork Mince /tofu minced /chicken 100gr
  • BBQ Eggplant ,skin off ,cut into small pieces 200gr
  • Black pepper 2 pinches
  • Oil 1tbsp

Method :

  • Add 1tbsp oil into the wok then saute the garlic and pork mince /tofu mince/chicken mince
  • Add all the dressing sauce into the wok, bring into Boiling and garnish with some spring onion and garlic chive, Black Pepper
  • Then pour all the sauce into the BBQ Eggplants
