Bot Chien ( fried rice cake with egg serve with dipping sauce )
Dipping sauce
Ingredients
- Fish sauce 1tbsp /(soysauce 1tbsp plus 1 pinch of salt)
- Sugar 1tbsp
- Kumquats/lime /lemon 1tbsp
- Water 1tbsp
- Chilli minced 1pinch
- Garlic 1 pinch
Method : Mixed all ingredients together
Fried rice cake with egg
Ingredients
- Rice flour :250gr
- Tapioca flour 25gr
- Egg 2pcs
- Soysauce 1tbsp
- Turmeric 1/2tsp
- Water 275ml
- Salt 1 pinch
- Spring onion roughly chopped 20gr
- Mints roughly chopped 25gr
- Pickle carrot ,white radish,papaya 100gr ( fancy carrot,white radish ,papaya 100gr marinade with 1tbsp sugar ,1tbsp kumquats/lime/lemon and 1pinch of salt )
- Fancy cucumber 50gr
- Serve with Dipping sauce
Method:
- Add rice flour, tapioca, salt and water into the pot and bring it to boiling until the flour quite thick. Turn heat off and keep going to stir it well
- On the steamer tray .add oil cover whole steamer tray. Pour all the flour on the top and steam it for 30minutes
- Take the rice cake out and cut cube pieces then marinade with 1tbsp soil sauce and 1/2tsp turmeric
- Add oil on the pan then panfried the rice cube until golden brown then add 2 eggs into the pan. Until it cooked then garnish with spring onion on the top
- Place it on the plate with pickle carrot,radishes ,papaya , fancy cucumber and mints
- Serve with dipping sauce
