Spicy beef Noodle soup /spicy chicken noodle soup

Bun Bo Hue , Bun Ga hue

Serves 6portion

  • 50gr roasted  whole fresh ginger (“gừng”)
  • 3 Stars anise (“hoa hồi”)
  • 9 Cloves (“đinh hương”)
  • 3 Cinnamon (“quế cây”) stick + 3Cardamom (“thảo quả”)
  • 100 g shallots (“hành tím”)
  • 2 kg beef bones or 2 kg chicken bone
  • 500 g beef brisket + 25 g beef fat ( chicken fillet 200gr)
  • 250 g raw beef filet thinly sliced
  • 10 pcs black pepper
  • 3 tablespoon fish sauce (“nước mắm”)
  • 3tbsp sate sauce
  • 100gr pineapple minced
  • 1 teaspoon pepper
  • 1kg rice noodle (bun bo )

Accompaniments

  • 1 onion, peeled and sliced (“hành tây”)
  • 2 red long chilies, minced and 2 limes cut into wedges
  • Fresh mint leaf (“húng cây”) and Fresh Erygium (“ngò gai”)
  • 100 g bean sprouts (“giá”)
  • 1 spring onion, sliced to garnish (“hành lá”)
  • Chili sauce and Hoisin sauce (black bean sauce)

Method

  • In a big pot place the beef bone( chicken bone) with water over the bone, bring to a boil during 3minutes, and then rinse the bone with fresh water.
  • Roast in an oven the ginger cut in half, the shallot in Half Hour 180degree
  • Roasted anise star, cloves, cinnamon, cardamom and Black Pepper  in 1 Minutes in Fried pan and then put in a small fabric bag (like a tea bag).
  • Place the rinsed bone, the beef brisket and the small fabric bag into a big pot. Cover with fresh water (about 2,5L) and simmer for at least 4 hours (beef brisket for 1 hour only, slice, after cool). Strain it with a fine strainer to obtain a clear beef stock.( for the chicken do exactly same but simmer only 1.5 hour  and simmer chicken fillet is only 30 minutes )
  • Place the clear beef stock and the beef brisket in a new clean pot( Place chicken stock into clean pot ) . Bring to a boil
  • In another pot sauté 3tbsp sate sauce with 100gr pineapple minces in 3 minutes then add into beef stock .Simmer for 15 minutes .Seasoning with 1tbsp fish sauce and 1tbsp mushroom powder for 1 litre of soup
  • Blanched fresh rice Noodle in 3 seconds with Beansprout then put into The Bowl top with thinly slices of raw beef filet( thin slice of chicken

fillet ) and onion, then pour hot stock in and serve with accompaniments as your choice.

  • Serve with Hoisin sauce ,chilli sauce ,Mints and 1pcs Lime Juice

Ingredients:

  • Onion 1pcs
  • Lemongrass 2tbsp
  • Ginger 2ttbsp
  • Garlic 2tbsp
  • Chilli sauce 1tbsp
  • Five spices 1tsp
  • Annatto seed Oil 4tbsp
  • Oyster sauce 1tbsp
  • Sugar 1tbsp
  • Fish sauce 1tbsp

Method

  • Saute onion with oil until Nice colour then add lemongrass ,ginger ,garlic ,chilli and stir well
  • Then add fish sauce, oyster sauce, sugar, chilli sauce and five spices into wok. using it for marinade or dipping sauce
