Recipes 51: BBQ Fake Meat, vegetables skewer with sate sauce Serves 4
Ingredients
- Sate sauce 120ml
- Eggplant slice 1cm 100gr
- Carrot sliced 1cm 100gr
- Onion cut half and divided 4 pieces 100gr
- Capsicum cut square 3cm 100gr
- Fake meat soaked it water for 30 minutes 100gr
- Skewer 8pcs
- Roasted peanut for 40gr for garnishing
Method:
- Mixed all ingredients together except peanut and rest for 10 minutes
- Add 1pieces fake meat into skewer then Add eggplant, carrot, onion, capsicum and doing same like that again on this skewer two more times .
- Do exactly same for other skewer until finish 8 skewers
- Bring oven 220degrees and place tofu and vegetables skewer in the oven and cooked for 10 minutes.
- Bring sate sauce left over from mixture to boiling and place it on the top of tofu and vegetables skewers and garnish with roasted peanut
- Serve hot
Sate Sauce :
Ingredients
- White onion /red onion minced 800gr
- Lemongrass minced 200gr
- Garlic minced 100gr
- Ginger minced 100gr
- Chilli minced 100gr
- Chilli oil or annatto seed oil 1 litre
- Vegan fish sauce 200ml
- Sugar 200gr
- Soy sauce 200ml
- Oyster mushroom sauce 200ml/mushroom powder 200gr
- Chilli sauce 50ml
- Five spices powder 10gr
- Black pepper 10gr
Method:
- Add chilli oil/annatto seed oil on the wok then add white onion and stir it in low heat around 10 minutes to 15 minutes to make sure the color onion turn brown
- Add lemongrass, garlic, chilli and ginger. Stir it around 3 minutes
- Add all the ingredient left over on the wok and stir it until boiling and simmer it for 1 minutes
- Serve hot for dipping , soup , bbq , stir fry
