Fresh Rice Pastry rolling with Pork Mince and Mushrooms serve with BBQ Pork ( Banh cuon)
Ingredients for Battle
- Rice four 200gr
- Tapioca flour 70gr
- Water : 650gr
- Salt 1tsp
- Spring onion 1tsp
- Oil 1tbsp
Method :
- Mixed all flour ,water and salt together
- Rest for 30 minutes ( better overnight)
- Add spring Onion and Oil before cooking
Cooking:
- Add 1 small cup into nonstick Pan make sure the Battle cover up properly the pan and thin
- Cover up the Lip for 30seconds
- Turn the fresh rice pastry into the plate
- Stuffed with pork ,Mushrooms and some fried shallot
- Rolling into Nice Pieces
- Cut into small pieces
- Garnish with some blanched Beansprout ,some different Kind of mints ,spring roll and dipping sauce
Dipping sauce :
- 1tbsp water
- 1tbsp Kumquats juice or Lime Juice
- 1tbsp sugar
- 1tbsp fish sauce
- 1tsp garlic
- 1tsp chilli
Method :
Mixed well together until sugar disolved
Stuffed :
- Garlic 1tsp
- Mushrooms fungus 200gr
- Pork Minced 200gr
- Onion Minced 100gr
- Fish sauce 1tbsp
- Sugar 1tbsp
- Black Pepper 1tsp
- Oil 1tbsp
Method :
- Add oil into the wok then saute garlic
- Add Pork Mince ,onion and Mushrooms fungus
- Stir well until the Pork cooked
- Seasoning with fish sauce ,sugar and Black Pepper
BBQ Pork
BBQ Pork /bbq chicken /BBQ Beef /prawn
Ingredients :
- Lemongrass minced 1tbsp
- Ginger Minced 1tbsp
- Sugar 2tsp
- Black Pepper 1tsp
- Chilli or Chilli sauce 1tsp
- Garlic Minced 1tsp
- Clean Pork / beef fillet/ chicken fillet 200gr /prawn 5pcs
- Five Spicy Powder 1 pinch
- Oil 1tbsp
Method : Mixed well all ingredients together then add 1 tbsp oil in the Last Minutes .Rest 15 minutes
