Cháo Vịt (duck rice soup)

Ingredients

  • Duck leg 250gr
  • Rice 50gr
  • Water 1 litre
  • Shallot 1tsp
  • Garlic 1tsp
  • Pepper 1pinch
  • Carrot minced 50gr
  • Spring onion 50gr
  • Ginger julienne 1tbsp
  • Julienne chilli 1tbsp 
  • Fish sauce 1tbsp
  • Sugar 1tbsp
  • Salt 1tsp
  • Muhsroom powder 1tbsp
  • Chinese cabbage julienne 50gr
  • Lime and mints for serving

Method:

  • Add rice in the pot then roasted rice until nice colour then adds water and simmer for 30 minutes then add duck into the rice and cooked for 1 hour
  • Add carrot and seasoning with fish sauce 1tbsp, sugar 2tsp, muhsroom powder 1tbsp
  • Serving with cabbage salad and ginger sauce

Cabbage salad

  • Julienne cabbage 100gr
  • Julienne mints: 20gr
  • Fish sauce 1tbsp
  • Sugar 1tbsp
  • Kumquats 1tbsp
  • Chilli 1tsp
  • Garlic 1tsp

Method : Mixed all ingredients together and serving with duck

Ginger sauce:

  • Ginger 1tbsp
  • Sugar 1tbsp
  • Fish sauce 1tbsp
  • Water 1tbsp
  • Julienne chilli 1tbsp
