Cháo Vịt (duck rice soup)
Ingredients
- Duck leg 250gr
- Rice 50gr
- Water 1 litre
- Shallot 1tsp
- Garlic 1tsp
- Pepper 1pinch
- Carrot minced 50gr
- Spring onion 50gr
- Ginger julienne 1tbsp
- Julienne chilli 1tbsp
- Fish sauce 1tbsp
- Sugar 1tbsp
- Salt 1tsp
- Muhsroom powder 1tbsp
- Chinese cabbage julienne 50gr
- Lime and mints for serving
Method:
- Add rice in the pot then roasted rice until nice colour then adds water and simmer for 30 minutes then add duck into the rice and cooked for 1 hour
- Add carrot and seasoning with fish sauce 1tbsp, sugar 2tsp, muhsroom powder 1tbsp
- Serving with cabbage salad and ginger sauce
Cabbage salad
- Julienne cabbage 100gr
- Julienne mints: 20gr
- Fish sauce 1tbsp
- Sugar 1tbsp
- Kumquats 1tbsp
- Chilli 1tsp
- Garlic 1tsp
Method : Mixed all ingredients together and serving with duck
Ginger sauce:
- Ginger 1tbsp
- Sugar 1tbsp
- Fish sauce 1tbsp
- Water 1tbsp
- Julienne chilli 1tbsp
